Here’s my recipe:
2 large eggs
1/2 cup of chopped, cooked bacon
1 cup of milk
2 tablespoons of unsalted melted butter
In a small bowl mix the eggs and milk together, then add in the chopped bacon, and the cooled, melted butter. Lastly, add in the pancake mix to the wet mixture, and stir everything together. Then just pour the pancake mixture into a silicon baking dish. I decided to use my thinkgeek R2D2 silicon cupcake molds and they worked perfectly!
