Gluten Free Sugar Cookies in a Flash

My go-to baking mix for making sugar cookies is always Pamela’s Products Sugar Cookie Mix. Ever since going gluten free and testing out several different sugar cookie mixes, Pamela’s has always worked best for me. I love that I can be as creative as I want with decorating sugar cookies and shaping them into fun edible treats.

Those adorable lightning bolt sprinkles you see my the pictures are made by geeky hostess, and of course, they’re gluten free. Make sure to check out the geeky hostess website for more fun sprinkles! These cookies are the perfect sweet treat to enjoy with friends and family while watching the newest season of The Flash premier next week on October 4th, 2016. Fall Favorite – Peach Scones

fullsizerender-4-copy-2I’ve made lots of scones, mostly with chocolate chips, because I love chocolate, but this week I made scones with peaches and they tasted amazing! I think peach scones might be my new fall favorite sweet treat. I used the Pamela’s Products biscuit and scone mix with 2 cups of organic sliced peaches, 1 cup of milk, and 12 tablespoons of well chilled butter. When shaping your scones, make sure to have wet hands, the dough can be sticky, and I have found that having wet hands works best to shape the dough before slicing it. Top the dough with organic cane sugar before putting it into the oven. Bake at 400 degrees for 20 to 25 minutes, let the scones cool, serve them up with some ice cream, and enjoy!

TIC TAC TOE Back to School Snack Recipe

Ingredients:

5 Enjoy Life Foods Cocoa Loco Baked Chewy Bars

1/2 a cup of Enjoy Life Foods Beach Bash Fruit & Seed Mix

1/2 a cup of Enjoy Life Foods Mountain Mambo Fruit & Seed Mix

1 cup of Enjoy Life Foods Semi-Sweet Chocolate Mega Chunks

1 teaspoon of oil (I used organic coconut oil, but you can use any oil of your choice)

Instructions:

Cut each bar in half. I had one half left over and ate it while putting this snack together. Mix the chocolate chunks and oil together in a bowl before melting them in the microwave. Microwave the chocolate and oil mixture for 30 seconds, then take it out of the microwave and stir the bowl. If needed, add another 30 seconds to continue melting the mixture. Spread the melted chocolate mixture over the bar halves. Then decorate the bars in X and O shapes using the fruit and seed mixes.

Gluten Free & Allergy Friendly Options at Disneyland + Disney California

Disneyland is more than just a theme park for me, it’s a magical place that constantly makes me smile. Not only am I excited each time I enter the park, no matter who I’m there with, I always find stories to talk about from previous fun Disneyland memories with friends and family.

IMG_2244 Celebrating my birthday dinner at Steakhouse 55 at the Disneyland Hotel was incredible! I had already looked up the menu in advance and was delighted to see many of the options were allergy friendly. Disney is all about details – my menu even said Happy Birthday on it, how cool is that? Plus they had gluten free bread rolls that tasted great, they were fluffy and warm when served. After ordering my food my expectations were exceeded when bone marrow accompanied my steak dish. I love bone marrow! My steak was cooked perfectly, the scalloped potatoes were cheesy, creamy, and left me wanting to take an extra order home. I was surprised with a creme brûlée dessert with a candle in the center to complete my birthday dinner. Creme brûlée is my favorite dessert and it was one of the best I’ve ever had! Can’t say enough good things about Steakhouse 55! Our waiters, Steve and Alfredo, made my birthday dinner an amazing experience, and I can’t wait to go again soon!

Having Celiac Disease and food allergies can make eating out or feeling normal in a social setting more of a challenge. Thankfully Disneyland has plenty of gluten free and allergy friendly options to make everyone feel included. In the collage above, you will see just a few of my favorites from this month while I was at the park. If you haven’t gone to the Tiki Juice Bar, please promise me next time you go to Disneyland it will be at the top of your list. Whether you’re just in the mood for some pineapple juice, a Dole whip, or Dole float – your tummy will happy, and I know you’ll be smiling with delight. There are also several food carts throughout the parks with fresh fruit. One of the newest editions I have found to be an essential part of my Disneyland visits is finding the Enjoy Life Foods snacks on Main Street. I believe in dessert everyday, especially at Disneyland. The Enjoy Life Foods rice milk bars are on my amazon shopping list as an item I order in bulk. And now having access to these chocolate bars with Disney characters featured on them, along with a variety of other Enjoy Life Foods options, makes me even happier when I’m at Disneyland!

It means a lot to have peace of mind when eating out when you have food allergies and Celiac Disease. I am beyond impressed with the staff, menu options, and the quality of allergy friendly food at Wine Country Trattoria. I can’t begin to tell you all how incredibly sweet the chef and staff are at Wine Country Trattoria in Disney California. Chef Janine and Carlos made sure to come by my table multiple times to go over every ingredient and any options they could provide me in addition to what was available on the allergy friendly menu. All of the food was delicious! From the fresh, warm, gluten free bread rolls to the caprese salad, and the quattro pomodoro gf pasta. The gluten free bread is insanely yummy! Most gluten free bread feels like a brick, and quite frankly, tastes like air or sandpaper. For those reasons, I have very few gluten free bread brands I am loyal to buying because baking it from scratch always tastes better. But the Local Oven gluten free bread at Wine Country Trattoria was so light, fluffy, and delicious! I asked if the restaurant could please provide me with the brand of the bread because I will be ordering more. The restaurant was so nice, they even let me take a few gluten free bread rolls with me after finishing my meal, and I ate them as a snack while I spent the rest of the day at the park. Everyone at the restaurant is so welcoming, contagious smiles all around. Chef Janine even signed a menu for me that I got to take home!

My experience was so great at Wine Country Trattoria, I even went back for lunch the following day. Jennifer and Chef Jose were both so sweet, and made sure all of my food was properly prepared to accommodate all of my dietary restrictions. Eating out is one of the most challenging things about having an autoimmune disorder and food allergies. It means a lot not to have to pack all of my meals when I’m out so I can feel included too. More reasons why I can’t say the word Disneyland, or think about Disneyland in general without smiling. And now that I have my Disneyland annual pass renewed, I will be sure to be back as often as possible! I will make sure to be posting where and what I eat at Disneyland, and sharing it with all of you here on my blog, and across my social media accounts.

Comic Book Food Ads

IMG_9675 One of my favorite things about packing my own snacks when going to any convention is meeting more people who also have food allergies. This may seem strange to some people, but it’s nice to connect with people over things that often times make you feel the most restricted. This week when I got my Batman comic book in the mail and started to read it I came across multiple pages that were advertising Snickers bars. Anyone else get comic books delivered to their front doors too? Some people subscribe to magazines, I prefer comic books. Aside from reading about my favorite super heroes, whenever I come across food ads in comic books I always wish they would be more allergy-friendly focused. I know there are lots of people out there like me with either an autoimmune disorder or other food allergies. When I saw the Snickers ad I immediately thought about how cool it would be to see an Enjoy Life Foods chocolate bar featured in the ad instead. Have you ever tasted any of their chocolate bars? The company is a staple brand for me because it’s free of the top 8 common allergens. The Enjoy Life Foods chocolate bars are so good, especially the milk chocolate crispy rice bars!
